Avocados are pretty weird; they can be called alligator pears. They’re also actually a fruit. And like the banana it has greet for you potassium. But, it actually has more potassium than a banana. In a 100 gram serving, you get 14 percent of your recommended daily allowance, compared to the 10 percent from the banana. It’s also really, really fatty, but good fatty. Around 77% of the avocado’s calories from fats, because it’s loaded with oleic acid. Which is a monounsaturated fatty acid, that’s also a huge part of olive oil. It’s been linked to it’s reduction of inflammation and helping fight off cancer elements.
Like cancer, heart disease kills people. Heart disease is the most common cause of death in the world. This is due to cholesterol, triglycerides, blood pressure and other things. And the composition of the avocado helps aid and reduce those things. In a study with giving half of a group avocado and the other half nothing, the group who received the avocado had lower cholesterol.
I have arthritis. It’s a pain in the ass. Well not actually, more like a pain in the ankle. There have been studies that show extracts from avocados and soybean oil, called avocado and soybean unsaponifiables, help reduce the symptoms. So that’s rad, but it’s in question if whole avocados can also have the same effect.
You know what else is pretty cool? Bread. When I was in France I ate so much bread. But what’s not rad is how many calories bread has, so I don’t eat it that often. But I found a holy grail for bread and sandwich lovers. It’s called Sara Lee ‘Delightful’ bread. It has 45 calories a slice, so that’s only 90 calories for a sandwich! I personally like the multigrain but they have other types too. There’s no trans fats and no high fructose corn syrup and it’s actually made with whole grains. I will warn you though, it is a bit thinner than normal bread. But you still get the mouth feel and psychological connection that it’s bread. So it’s not like you have a sandwich wrapped with lettuce and you’re trying to trick your brain into thinking it’s a normal bread sandwich. All this info is pretty stupid without a purpose so here’s a recipe that incorporates all these rad things! This is my green eggs toast!
Things you will need:
– avocado (duh)
– 2 slices Delightful bread
– 2 eggs
– Salt (I use pink Himalayan salt)
– Pepper
– Lemon
– Food scale, set to grams
– Bowl (to hold your avocado mash)
– Frying pan
– Cooking Spray
– Toaster
I only have the avocado, eggs, and bread shown because those are the 3 things that are important. I’m also just bad at remembering to put everything in the shot. Forgive me!
So what you want to do first is put some cooking spray on your pan and put that on low heat so it can preheat while you get everything together. While this is happening, I get my eggs out of the fridge so they’re not cold cold. Because I’ve found they cook better when a little bit more room temperature. Next I put my bread in the toaster, you can toast it as long as you like. So you have your toast going and your pan preheating. Now to make the mash. Simply cut the avocado in half, but there is a pit in the middle so you have to cut it around that. Be careful getting the pit out, because you hit that with your knife and ya girl almost cut herself doing this. To get the skin off of the avocado I cut a bit into it and just peel it off, some will get on your skin. But your skin feels amazing afterwards. Put that in your bowl and go to town mashing it, mash it however much you like. Jack White likes his a little chunky, whereas I like mine a little smoother. Add some salt and pepper and then a little bit of lemon juice. The acidity really makes this banging.
To cook the eggs, I just crack them into my pan and cook them until they’re over medium. I just eyeball this so it varies but it’s good no matter what they are. You could do a egg white scramble to make this lower in calories, but I find the creaminess from the yolk really elevates this dish.
So while all that was happening your toast was probably done so put that on a plate and put your avo mash on, I used 48 grams total (24g per slice). Do this part while cooking your eggs so you’re not just staring at the eggs cooking. When your eggs are done, just put that on the avocado toast and you’re done!
A great way to get your healthy fats in and protein and some carbs. A nice around meal that will honestly keep you so full.
