So last week there was no Treat Yo Self because what I created was more Frankenstein-y than I wanted. But this week I’m making up with a recipe for a pudding that is so healthy and so delicious that I’ve gotten a multitude of friends addicted to it too. It’s my Chocolatey Chia Pudding. The 4 simple ingredients that it takes are so healthy for you too, it’s doing more good for you than you think when you taste how good it is.
The main ingredient is obviously chia seeds. In 28 grams (my recipe uses 24 grams so just over that), they contain 11 grams of fiber, 4 grams of protein, 9 grams of fat (but 5 if those are Omega-3’s), 18% of your recommended daily allowance of calcium, 30% of your recommended daily allowance of manganese (the same amount for magnesium as well), and 25% of your recommended daily allowance of phosphorus. They also contain large amounts of Zinc, Vitamin B3, Potassium, Vitamin B1, and Vitamin B2. They are also a highly detoxifying food, due to the nature of it when it sets; like Aloe Vera, chia seeds become gelatinous in liquid so this helps cleanse your system.
Another large component of this pudding is the unsweetened cocoa powder. It just 1 tablespoon of unsweetened cocoa powder, it has only 12 calories, 1 gram of protein and only 1/10 of a gram of sugar. That 1 tablespoon also has 1.8 grams of fiber, which for men is 5% recommended daily allowance and for women is 7% recommended daily allowance. You are also getting more manganese, magnesium and zinc (and iron as well), because that 1 tablespoon has 3 to 9% recommended daily allowance.
The sweetness in this recipe is from the agave. Agave is a plant, that is related to the yucca and lily and grows in the southern and western United States and in central and tropical South America. It’s a low-glycemic sweetener, so while sugar (sucrose) has a glycemic value of 92, agave has a glycemic value of only 27. So agave won’t cause a sharp rise or fall in blood sugar. Agave also contains saponins and fructans, generally found in quinoa and other plant roots, which have anti-inflammatory and immune system boosting properties.
The final ingredient is cashew milk, but check back for a later post containing more in depth information about that.
So here are the things you will need:
– 24 grams chia seeds
– 150 grams unsweetened cashew milk
– 10 grams unsweetened cocoa powder
– 10 grams agave
– Food scale, set to grams
– Mason jar (optional)
So add your chia seeds and unsweetened cocoa powder first and mix those too. Then add your milk and this can be hard to combine, it just takes a bit of working. My best suggestion is make it in a mason jar so you can just shake the mixture until it’s basically combined and then finish mixing with a spoon. Finally add your agave, that you can mix with a spoon. Once it’s all combined, leave it in your fridge over night so it can set.
And there you have a nutritious breakfast or after dinner treat that is like a chocolate pudding but packs more of a punch with your health.
